President of Chez Moi
I was born in Alsace, the northeast region of France. However, my family heritage is from Dordogne, in the southwest corner of the country. From the age of fourteen, I trained at the culinary school in Blois outside of Paris. I continued to cook under such French culinary greats as Jacques Senechal and Joel Robuchon. In 1996, I was recruited by the Levy Restaurant Organization to be Chef de Cuisine at Bistro 110 across from the Water Tower in Chicago. I remained there until 2011. In 2012, along with Cristobal Huet, the former Blackhawks player, I created Chez Moi, a unique French bistro in the heart of Lincoln Park.
